Refreshing, lively and crisp fruity flavours gives a delightful mouth feel of summer fruits. A touch of dryness perfectly balances the fresh fruitiness, leaving a clean tasty finish.
Estate grown Cabernet Sauvignon, Merlot and Shiraz is machine harvested in the coolness of the night using the selective harvester. The fruit which is picked before the remainder of the red varieties has a good acidity and offers fresh summer fruit like qualities. All fruit is certified as organically grown.
Made in the traditional European way, the fruit is crushed and then in the tank we allow a few hours of skin contact to extract just enough colour and those fresh fruit flavours. After which the wine is run off and allowed to finish fermentation. The wine is kept fresh in the tank until bottling when we will use only low levels of sulphur and no fining agents.
