Polygon No. 3 is just 0.274 hectares in size and contains approximately 200 vines. Working with terroir specialist, Pedro Parra, we identified
this polygon to be unique in its limestone content. There is shallow red brown earth over deep chalky sedimentary limestone which contains fractured schist and the limited presence of iron. NASAA certified organic and biodynamic. 1471kg of Polygon 3 fruit was handpicked and delivered to the winery on the 15th of March. 70% of the fruit remained as whole bunches and was hand bucketed into concrete tulip, with the remainder destemmed. P3 spent a total of 27 days on skins before basket pressing and maturation in concrete egg until bottling in August 2023.
A haunting and ethereal wine with vibrant and high toned aromatics. Notes of orange blossom, lemon verbena and white pepper surround appealing red fruit. A wine full of tiny, fleeting moments. The palate is seamlessly integrated with mineral edges, intense fruit, fresh herbs and distinctly limestone-derived powdery tannin.
