Description
OLIVIER GARD – Burgundy, was borned in a family of farmers, and followed an unusual professional way. In 1990, he began to grow a fewacres of vineyards and red fruits.
Today, Manuel is a wine specialist, he grows grapes on a 11 ha area inthe Hautes-Côtes de Nuits, Côte de Nuits and Côte de Beaune. At 38 years old, he is one of the “new generation” winegrowers, and rewarded by many medals.
MATURING
9 months on fine lees (50% in vats, 50% in over-3-year-old barrels).
FERMENTATION
The grapes are totally de-stemmed. One-week maceration at a cold temperature, natural yeast. Left in vats for 15 days at 30°C with frequent treadings, getting warmer in temperature in the end.
