Description
The grapes are picked on flavor at optimum ripeness, gently crushedand each parcel of fruit is fermented separately on skins for 3 to 5 days with controlled temperature to prevent rapid fermentation retaining fruit flavor. The finished wine is pressed off skins and stored
in seasoned oak until it has gone through malolactic fermentation, racked and sulphured and further aged for 2 years before bottling.
This has a dark plum colour with a slight crimson hue. It showcases aromas of ripe blackberries, vanilla and dark chocolate leading into a palate packed with riveting flavors of black cherry, red plums, and ripe strawberries. With a solid-built frame of tannin and crisp acid, the
wine manages to find balance with the equitable amount of plush texture.
The results are in and the “Verdict” (Cabernet Sauvignon) has been delivered. Like the Guilty and the Innocent, only a “lucky few will ever
get to taste it”.
