TERROIR / CLIMATE
The varietals are planted on a chalky clay soil. Southern exposure on a Mediterranean climate.
WINE-MAKING PROCESS
Total destalking of the harvest. Long cask in French Oxoline barrel (=fermentation and ageing in the barrel). Long maceration of 24 days. Thisunique process allows the wine to be full-bodied. Manual pressing. Racking before bottling.
TASTING NOTES
Deep garnet red hue with dark purple relfections. Raspberry nose mixed with liquorice aromas (redcurrant, blackberry, sloe, blueberry). Round and concentrate mouth with fruits jam. Nice concentration and good balance. Coffee note finish. At best at 17° within 10 years (you can still drink it right now!)
FOOD PAIRING
Game or slow cooking meat – Platter of mature cheese. Perfect with a chocolate fondant too! At best at 17° within 10 years (you can still drink it right now!)
