PRODUCTION
A single vineyard, Gimblett Gravels wine crafted with a portion of organic grapes grown on Mission’s Mere Road vineyard. Grapes were partially crushed and fermented to a maximum temperature of 28C. The juice was inoculated with specially developed, aromatic yeast strains to intensify varietal character development. Post-fermentation maceration of 20 days was carried out and then batches kept separately for maturation. Unfined for a rich and complex style.
TASTING NOTES
Showing rich black and red fruit character with classic pepper notes and hints of mocha. Underlying savoury notes, fine tannins and a velvety texture offer refinement, power and persistence.
